Otway Cherry Pork Cutlets
Serves: 4
Time: 25 minutes
Ingredients: -
- 4 pork cutlets (2 packets of Otway Pork Cutlets available from selected Coles, Safeway or ask your butchers to cut you some)
- 2 tbsp olive oil
- 50 g butter
- 2 tsp chopped thyme
- 1 bay leaf
- 250 g fresh, frozen or canned cherries, halved and pitted
- ¼ cup cherry jam
- 2 tbsp balsamic vinegar
Cooking Instructions:
Pre-heat oven to 180oC.
Brush cutlets with 2 tsp of olive oil, seasoning to taste with salt and pepper.
Heat a large frying pan over high, then add remaining oil and heat to hot. Cook the cutlets, turning occasionally for 3-5 minutes or until golden all over.
Place on a baking tray and transfer to the oven for 5 minutes or until cooked through. Transfer to a plate and tent with foil to keep warm.
For the sauce, add the butter to the pan. When melted add the chopped thyme and bay leaf. Cook for 1 minute, stirring. Add cherries, cherry jam and balsamic vinegar and simmer on high for 3 minutes or until sauce thickens.
Serve immediately.
